This is a basic tabouli recipe that I adapted to add quinoa. Big hit at the last sustainability group potluck.
Quinoa Tabouli
Cook 1 c. quinoa in 2 c. water (bring the water to boil first, add grain, simmer for 15 - 20 min. til it has little white tails and tastes done)
To cooled, cooked quinoa add:
1 - 2 med. tomatoes chopped
1 med. cucumber, skinned and chopped
1/3 - 1/2 red onion, sliced thin
crumbled feta cheese to taste
capers to taste
olives?
lots of chopped parsley
Dress with:
1/4 - 1/3 c. balsamic vinegar
1/3 - 1/2 c. olive oil
2 cloves garlic, squished
salt and pepper to taste
All measurements are approximate and to taste!

I tasted this & it was fabulous, but Annie, didn't it have a sweet potato sauce? Can we have that too? Yum, yum, yum.
